To say that Chef Da Fonseca is experienced would be quite an understatement. He has undergone extensive training under the tutelage of some of the best chefs in their respective fields such as Chef Jaques Arpi from Choron, represting the classical French school, Italian cuisine under Chefs Enzo Barbetti and Gisella Isidori of Sienna and Umbria Regions of Italy among others. He then became an Executive Chef at Lucas Wharf Restaurant and wrote a food column in a local newspaper. He owns the Flavor Source Sauces and Catering Services, and in addition to that has worked for several wineries in the California Wine Country.
It is mind boggling to see how many things he has done. He has also been the Corporate Executive Chef for Marconi Conference Center, Corporate Chef and Manager for Compass Group USA, Corporate Chef and Manager for Delaware North Companies and CA One Services. In 2003, he has become a part of the California Culinary Academy, where he took Restaurant Production classes. He has also lectured at The Professional Culinary Institute and from September 2006 he became the Executive Chef at The San Francisco Towers. From January 2007, Chef Da Fonseca became a Chef Instructor at the prestigious Culinary Institute of America.
